Custard Creams recipe
Custard creams are a favourite treat of many - and this divine homemade custard creams recipe is super sweet, creamy and delicious. Crisp shortbread envelopes a lovely creamy filling.
Ingredients:
- 300g plain flour
- 125g butter, softened
- 100g icing sugar
- 2 egg yolks
- 1 tsp. vanilla extract
- 100g butter, softened
- 150g icing sugar
- 2 tbsp. custard powder
Directions:
Make the biscuits by mixing together the butter, sugar, egg yolks and vanilla. Beat until light and fluffy, then sift in the flour, stirring until combined. Roll the dough out on a floured surface until 5mm thick, then cut into even-sized squares. Put onto a baking tray, and cook in a 200C oven for 8-10 minutes until crisp.
Beat the butter, icing sugar and custard powder together until smooth.
Sandwich 2 biscuits together with a little of the icing, then continue until you've used all biscuits and all icing.
